Desi chicken vs broiler: what is the difference?
In Pakistan, desi chicken costs much more than broiler, and many families say it tastes the way chicken used to. Here is what the difference really is.
Age and growth
Broiler chickens are bred to grow very fast and are usually ready in about six weeks. Desi birds grow slowly. Our desi roosters are raised for 4 to 6 months before they come to your kitchen.
Taste and texture
Because desi chicken grows slowly and moves around, the meat is firmer, leaner and full of flavour. Broiler meat is softer and milder.
Cooking desi chicken
Desi chicken needs a little more time on the stove. It is perfect for karahi, yakhni and slow-cooked salan, where the long cooking brings out its taste. A pressure cooker saves time if you are in a hurry.
How to spot broiler sold as desi
Broiler is sometimes sold as desi. Signs to watch for: very large, soft breast meat, a lot of fat under the skin, and meat that cooks very quickly. Buying from a seller who raises their own birds is the safest choice.
