Sidr (beri) honey: what makes it special

Sidr honey, known in Pakistan as beri honey, is one of the most prized honeys in the country. Here is what makes it special and what to look for when you buy it.

What is Sidr (beri) honey?

Bees make Sidr honey from the flowers of the beri (Sidr) tree. The trees flower for a short season, so there is only so much of this honey each year. It is thick and rich, with a deep, warm taste.

Raw honey vs processed honey

Raw honey is taken from the hive, strained and packed. Much of the honey in shops is heated and filtered so it stays runny on the shelf, and some is thinned with sugar syrup to make it cheaper. Raw honey keeps more of its natural aroma.

Why does raw honey crystallise?

Many people think honey that turns thick or grainy is fake. In fact, crystallising is natural for raw honey, especially in winter. Stand the jar in warm water and it softens again. Do not microwave it.

What about home tests?

You may have heard of the water test or the flame test. These are not reliable ways to prove honey is pure. The best guide is a seller you trust who can tell you exactly where the honey comes from.
