Pure desi ghee vs vanaspati: what you should know
Desi ghee is part of almost every Pakistani kitchen, from Sunday parathas to the tarka on daal. But a lot of ghee sold as desi is mixed with vanaspati or other cheaper oils. Here is what you should know.
What is pure desi ghee?
Pure desi ghee is made from milk fat alone. Butter or cream is cooked slowly until the water evaporates and the milk solids separate, leaving clear golden fat with a nutty smell. Nothing else should be added.
What is vanaspati?
Vanaspati is a hydrogenated vegetable oil. It looks a little like ghee and costs much less, which is why it is sometimes mixed into ghee sold as desi. It does not have the taste or smell of real ghee.
What to look for when you buy
- Smell: pure desi ghee has a rich, nutty smell, especially when warmed. Blended ghee often smells flat or oily.
- Texture: at room temperature, real desi ghee often sets with a slightly grainy texture.
- Melting: a little pure ghee on your palm starts to soften quickly from body heat.
- The source: ask who made it and how. A seller who makes their own ghee can tell you.
These signs help, but no home check is perfect. Only a lab test can prove purity, so it matters most to buy from a source you trust.
